Homemade Energy Bars

If you are like me, hunger can over take you when you are not at home and busy running from one thing to the next. Living in NYC, a convenienceĀ store is never too far away, but the choices are minimal if you want to avoid processed foods and the sugar, soy, and preservatives that go along with them.

My mom shared this recipe for Homemade Energy Bars with me. They are raw, gluten and dairy free. The only trick now is remembering to carry a few in your bag or car…


Homemade Energy Bars
 
Ingredients
  • 3 cups almond flour
  • 1 cup garbanzo bean flour
  • 4 tbsp cocoa powder (unsweetened)
  • ¼ cup unsweetened shredded coconut
  • ¼ cup dried blueberries (or whatever dried fruit you prefer)
  • dash of sea salt
  • ⅓ cup honey
  • ⅓ cup hot water
  • 1 tsp vanilla extract
Instructions
  1. Combine dry ingredients.
  2. Mix honey, water, and vanilla and blend into dry ingredients (takes a little muscle with a wooden spoon).
  3. Press mixture into a small buttered dish. A 8 inch square pan is about the right size.
  4. Allow to "air out" for a few hours, and then cut into squares.
