Baked Sweet Potatoes with Honey and Orange Glaze

Chris and I both love sweet potatoes. I recently did a post on mashed sweet potatoes and can’t get enough of them. It’s hard to believe that they are so good for you too. The nutritional benefits are numerous, but the highlights are that they are a great source of vitamin A, vitamin C, potassium, fiber and antioxidants.

I adapted this Baked Sweet Potatoes with Honey and Orange Gaze recipe from Tyler Florence’s of the Food Network. I added some orange juice and cut the pieces smaller and baked them until they developed a delicious caramelized flavor. I also toasted and chopped some unsalted pistachio nuts to embellish with beautiful color and crunch.

Baked Sweet Potatoes with Honey and Orange Glaze
 
Ingredients
  • 2 large sweet potatoes
  • 3 tbsp of olive oil
  • 2 tbsp of honey
  • juice from ¼ orange
  • 2 tsp of cinnamon
  • dash of sea salt
  • handful of pistachio nuts - toasted and chopped
Instructions
  1. Preheat oven to 350.
  2. Peel sweet potatoes and cut into ½ inch pieces.
  3. Place potatoes in a large bowl and add olive oil, honey, orange juice, cinnamon and salt. Toss to combine.
  4. Arrange potatoes on baking sheet and bake for 1 hour (tossing every 15 min or so).
  5. Sprinkle with pistachio nuts and serve.
