It is mid-August as I write this, which is about the time that gardens and farms start exploding with tomatoes. My mom sent Chris and me back home with a small box of them from her garden. I’m definitely not a canner, so I came up with this recipe for pasta with fresh tomatoes and kale as a way to use them up quickly and all at once.

Easy Homemade Hummus

Homemade Hummus for Cheaters

I buy hummus frequently, but I’m also very picky about ingredients – I try to avoid canola and soybean oil as well as any kind of additive or preservative, so I usually buy the least offending brand. Today, I tried making it from scratch – and it was so easy! I didn’t have any tahini on hand, so I just made it without. Is that technically still hummus? Maybe it’s only a bean dip. At any rate, it was super easy and delicious. Next time, maybe I’ll get a little more fancy, but for a quick homemade hummus this was perfect.

Homemade Chicken Fingers

The pink slime that turns itself into chicken makes us lose our appetites these days so our McDonald’s eating days are finished. Homemade Olive Oil Mayonnaise

I am unapologetic about my love for mayonnaise. This recipe for homemade olive oil mayonnaise is the best. Chris and I make a spicy sriracha/mayo dipping sauce for our sweet potato fries, I add it to sandwiches, burgers, canned tuna and salmon, and even as a base for some salad dressings. Store-bought mayonnaise, however, is not great.
