Perfect Hard Boiled Eggs

November 8, 2012

Eggs are an inexpensive and nutritious source of protein. Buying eggs from pastured hens gives you vibrant eggs yolks, especially in spring when their diet includes new green grass.

Roasted Baby Potatoes with Fresh Herbs

July 23, 2013

This is an easy way to prepare potatoes. Baby potatoes cook quickly and there is no peeling involved. Simply cut in half, add oil, seasoning and roast for 30min. A garnish of fresh herbs looks beautiful and adds additional flavor and nutrients.

Easy Homemade Hummus

Homemade Hummus for Cheaters

March 21, 2012

I buy hummus frequently, but I’m also very picky about ingredients – I try to avoid canola and soybean oil as well as any kind of additive or preservative, so I usually buy the least offending brand. Today, I tried making it from scratch – and it was so easy! I didn’t have any tahini on hand, so I just made it without. Is that technically still hummus? Maybe it’s only a bean dip. At any rate, it was super easy and delicious. Next time, maybe I’ll get a little more fancy, but for a quick homemade hummus this was perfect.

Coconut Almond Granola: Gluten and Dairy Free

July 1, 2013

I’ve been experimenting with different granola recipes lately. I made the switch from store bought to homemade granola a few years ago and haven’t looked back. Store bought is often too sweet, and made with cheap vegetable oils.

Homemade Chicken Fingers

April 17, 2012

Chris was telling me the other day how much he used to like McDonald’s Chicken Nuggets dipped in honey when he was a kid. The pink slime that turns itself into chicken makes us lose our appetites these days so our McDonald’s eating days are finished. But, the idea of that meal got stuck in my head, so here is my “real food” version of homemade chicken fingers.

Homemade Olive Oil Mayonnaise

June 25, 2013

I am unapologetic about my love for mayonnaise. This recipe for homemade olive oil mayonnaise is the best. Chris and I make a spicy sriracha/mayo dipping sauce for our sweet potato fries, I add it to sandwiches, burgers, canned tuna and salmon, and even as a base for some salad dressings. Store-bought mayonnaise, however, is not great.

Grass-Fed Beef Burgers

March 27, 2012

Sometimes nothing hits the spot like a burger. When I get a burger craving, I usually make it myself so that I can use fresh ingredients (no pink slime or other fillers in this ground beef) and serve it just the way I like it with cheddar cheese, spicy mayo and sliced avocado.

Sauteed Kale with Tomatoes

August 6, 2013

Sauteed kale with tomatoes is a favorite late summer dish of mine. The ripe, farm grown tomatoes that show up in August at NYC farmer’s markets make this recipe extra special. And I just love how the balsamic vinegar sweetens the kale and compliments the saltiness of the parmesan cheese.

Roasted Sweet Potato Fries

February 27, 2012

For me, roasted sweet potato fries are just as good as deep fried. I like mine a little on the burnt side, and they do burn easily, so it can be a close call occasionally. I’ve made these in all different shapes – fries, planks, wedges, circles – doesn’t matter as long as you cut them in about the same thickness.  If you don’t mind the skin, I recommend leaving it on to boost the fiber and nutritional value.

Quinoa with Fresh Mint, Peas, and Pecans

July 17, 2013

This recipe is inspired by a dish my mom made recently with wild rice. The flavors are delicious, but I’ve never been crazy about rice. I love quinoa, however, so I wanted to try making a quinoa version with a few modifications.
